Mediterranean Sandwich

3 slices of Wholewheat Loaf
1 egg
Cherry tomatoes
Basil
Parsley
Mint
Marjoram
Thyme
Salt
Extra virgin olive oil


Cook the hard-boiled egg and then cut it into wedges. Cut the cherry tomatoes, the bell peppers and the eggplants in the same way and place them in a bowl, along with the egg and olives. Prepare a sauce by putting in the blender: 6 basil leaves, some parsley leaves, the mint, marjoram, thyme and a pinch of salt and garlic. Blend everything by adding a drizzle of oil and a teaspoon of capers. Toast the bread and place the sauce, and vegetables.
